Pork Sausages with Mustard Sauce

For 4 
500 g Minced pork, free range! 
100 g Bread crumbs 
1 Tsp Ground Cinnamon 
½ Medium sized onion finely chopped 
2 Tsp fresh parsley finely chopped Salt and pepper, seasoning 
For the Sauce 
125 ml of single cream 
1 Tbsp grained / seeded mustard 
½ Tsp of Demerara sugar
1.   To make the sausages we start by placing all the ingredients in a bowl and mixing them well. 
2.  Grease a baking tray with olive oil and preheat the oven at 180ºC 
3.   Shape the sausage mixture with both of your hands, you can either make four large sausages or eight small ones. 
4.   Place them on the greased baking tray that will go in the oven at 180ºC for 20 to 30 minutes, until they are  brown (Remember: the smaller sausages will take less time). 
5.   While the sausages are cooking we can prepare the sauce. 
6.   After the 20 or 30 minutes we take the sausages out of the oven and spoon the sauce on top all the sausages, then return them to the oven covering them with foil, for another10 to 15 minutes, for when they will be ready to serve. 
7.   At the hotel restaurant we serve the sausages with fresh boiled potatoes or oven roasted old potatoes, and off course a nice green seasonal vegetable; such as, shredded cabbage, spinach and garlic, mange tout, broad beans, courgettes. Whatever is seasonal with you! 
8.   For the Sauce;  Mix the mustard and cream together with a spoon and then add the sugar as well.
